Mississippi Mud Pie Recipe

First of all, I'm just going to apologise to any one who made a New Year's resolution to eat healthily and cut out chocolate because this post ain't gonna help you. Whilst I'm all for healthy dishes, I don't think there's any harm in indulging every now and then, so if you're looking for a sweet treat, this Mississippi Mud Pie recipe is for you!

My other half has a real sweet tooth (as do I) and since he's currently off work recovering from his recent operation, we thought we'd have a go at making the Mississippi Mud Pie, found on the Good Food Channel website. It's originally a Hairy Bikers recipe but we made a couple of changes, such as swapping the dark chocolate sandwich biscuits for Co-op's Triple Chocolate Cookies (delicious) and adding Green & Blacks Organic Cocoa to the topping to make a chocolate cream instead. Using quality chocolate is a must and the Dr. Oetker 72% Extra Dark Chocolate is a great choice for this recipe.

I've popped the ingredients we used below but for the method please head on over to the Good Food Channel website, as I don't like to pinch other people's recipes! It's a really simple one to follow and good fun too!


For the base & sides
75g butter
150g plain chocolate digestive biscuits
150g Co-op Triple Chocolate Cookies

For the filling
135g Dr. Oetker 72% Extra Dark Chocolate
135g butter (cubed)
3 large eggs (beaten)
150g light soft brown sugar
150ml double cream

For the topping
250ml double cream
1 tbsp light soft brown sugar
25g dark chocolate (grated)

The Mississippi Mud Pie recipe makes around 8 portions and is lovely finished off with a splash of double cream. It's deliciously chocolatey and perfect for those who really want to indulge in their dessert. Make this for a dinner party and I'm sure it'd go down a real treat with your guests!
