Homemade Gingerbread Stars

Until yesterday, I didn't think I liked Gingerbread. Ginger has never been a flavour I've particularly enjoyed, so why eat it in biscuit form? But knowing my mum and son love gingerbread, I thought I'd have a go at making some and decorate them with Arthur as a fun thing for the afternoon. Turns out, these gingerbread stars taste absolutely delicious and have completely changed my opinion on ginger! YUM.

As I'd never made gingerbread before, I had a little look on Pinterest for inspiration and came across this fantastic recipe for gingerbread men on My Gorgeous Recipes. I've popped the ingredients below but please head over to the original source (linked above) for the gingerbread recipe. It was so simple to follow and the gingerbread turned out beautifully!

Ingredients:
350g plain flour
175g dark, muscovado sugar
80g golden syrup
1 tbsp bicarbonate of soda
1 tbsp ground ginger
1 egg

Now the original recipe does also include 1 tbsp cinnamon, however seeing as we're not all that fond of cinnamon in the Hunt household, I decided to give it a miss! As you can see in the photographs, I also used a star cutter for my gingerbread, as I didn't have a gingerbread man cutter. I found that the recipe made around 25 stars (though I can't remember exactly because I may have nibbled a couple before I counted them - oops!) They had a lovely soft, chewy texture, which I much prefer to biscuits with a snap.

I had every intention of getting Arthur to decorate the gingerbread stars with me, as I thought it'd make a lovely toddler activity but it turns out he was a little tired and much more interested in the eating part! So lazily, I decided to just decorate one of the gingerbread stars with sprinkles I picked up in a Gingerbread decorating kit over Christmas - sticking them on with a little paste (icing sugar + water).  The rest I simply sprinkled with icing sugar and voila!
